Metallurgical Calibration and Systematic Efficiency

Each instrument in the I-Tech series is forged from premium X50CrMoV15 high-carbon stainless steel, tempered to a Rockwell hardness of 56–57 HRC. This specific alloy provides the structural rigidity required for the Chef’s knife and Bread knife to maintain linear accuracy, while offering the lateral flexibility necessary for the utility and paring knives. The blades are hand-sharpened by ICEL master cutlers in Portugal to a precise 15° angle per side, ensuring a surgical initial bite and long-lasting edge retention.

The handles are injection-molded from high-impact polypropylene, featuring a textured surface for a non-slip, secure grip even when handling wet or fatty ingredients. This material is also thermally stable, allowing for rigorous sterilization without compromising the seamless bond between the steel tang and the handle, adhering to the strictest NSF hygiene standards.
