This instrument is designed with a more slender profile than a traditional wide chef's knife, providing increased agility and reducing the physical weight of the tool. The integration of a ribbed (Granton/alveolated) edge creates small air pockets between the blade and the ingredient, significantly lowering surface tension and preventing slices from sticking to the steel during high-volume prep.

Engineered for Fluid Motion and Lasting Performance

The heart of this knife is a 26 cm blade forged from high-carbon X50CrMoV15 stainless steel, tempered to 57 HRC. This metallurgical blend, containing Molybdenum and Vanadium, is specifically engineered to maintain a surgical edge through repetitive board work while offering excellent resistance to corrosion.

The blade is securely anchored into a high-density black polypropylene handle, which is injected directly onto the tang to ensure a seamless, permanent bond. This construction creates a completely hygienic, NSF-certified tool that eliminates crevices where bacteria could accumulate, making it fully compliant with the rigorous safety standards of commercial kitchens.
